Coca Cola BBQ Pulled Pork Sliders

We are coming into football season and what better way to celebrate game day than with some delicious Coca-Cola® BBQ Pulled Pork Sliders with Hawaiian Sweet Rolls!  Believe it or not, you can put this all together in under an hour and a half!
Coca-Cola BBQ Pulled Pork Sliders | www.housewivesofriverton.comThis time of year is one of busiest for our family.  Not only is it back to school, but it’s back to football!  We have three boys playing football this year, and it’s been crazy as can be, but incredibly fun too!  With all the running around we have to for all the practices and games, finding time to go grocery shopping is near impossible if I’m hoping to ever sleep.  My secret weapon is Walmart’s online grocery pick up.  It’s truly the easiest thing in the world.  I just add the items from my grocery list through the app, pick my time to retrieve my groceries, and show up!  They literally bring my groceries to my car and load them up for me.  Let me tell you, it’s a life saver to not have to drag my three little ones in and out of the store.

4lb pork roast
1/4 yellow onion, sliced
1 tablespoon flour
1 cup Coca-Cola®
Salt and Pepper to taste
Directions:
Sprinkle flour on the bottom of the electric pressure cooker.
Layer sliced onions on top of the flour.
Place roast on top of onions.
Pour Coca-Cola® over the top of roast.
Sprinkle with salt and pepper.
Set electric pressure cooker to high for 55 minutes.*
Let pressure release naturally.
When complete, roast should shred easily with two forks.
If your roast is not shredding easily, cook in electric pressure cooker for another 10 mins.
Toss with one cup of Coca-Cola® BBQ Sauce, serve on Hawaiian Sweet Rolls.
*If you do not have an electric pressure cooker, this can be done in a slow cooker, on high for 4-5 hours.

1 cup Coca-Cola®
1/2 cup pineapple juice
1/2 cup tomato sauce
1/4 cup ketchup
1 tablespoon cornstarch
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon granulated garlic
Directions:
Whisk together pineapple juice and cornstarch, set aside.
In a small sauce pan, bring Coca-Cola® and butter to a slow boil over medium heat.
Stir in tomato sauce, ketchup, salt, pepper, and garlic.
Whisk in pineapple juice mixture.
Reduce to low heat, allow to simmer and thicken while you prepare rolls and roast.

Coca Cola BBQ Pulled Pork Slider | www.housewivesofriverton.comOur three football players have a spirit night each week before their games.  It’s so much fun!  It’s like pre game tailgating!  So whether you are looking to feed a whole team, or to feed a houseful of team supporters, our Coca-Cola® BBQ Pulled Pork Sliders are the way to go!  You can even pre-make the sliders, wrap them in foil to keep them warm and use them as an on the go meal when you are running to all those football practices and games!  Of course if you are going to enjoy these delicious sliders, make sure you grab a Coca Cola® 24 pack, so you and all your friends can enjoy an ice cold Coke with these tasty sandwiches!
