Baked Salsa Chicken Flautas

I have mentioned before that when I was growing up, my grandparents ran a Mexican food booth at many of the local fairs and festivals in our area.  My whole family would work the booths and that’s how we grandchildren earned summer spending money and money for new school clothes.  As the years went on, we did fewer and fewer of the fairs.  Now we only do one fair a summer, and we’ve been doing it for 36 years!  It’s like a family reunion every year.  Participating in running our food booth and working so closely with my parents and grandparents instilled a love of cooking and baking for me.  I love sharing that love with my children and getting them in the kitchen to help me cook.  My kids were super excited to help me make our Baked Salsa Chicken Flautas.

April 30th is known as Dia Del Nino, Day of the Child in Mexico and many Latin American countries.  This is a day to celebrate and appreciate children.  Hey, we have Mother’s Day and Father’s Day…why not a Child’s Day?!  My kids are really excited have a day all about them and have already started making plans of what they want to do.  To me Dia Del Nino is not just about celebrating our kids, but also celebrating all that they are capable of!  Our kids are amazing and they have so much to offer, so why not spend a day helping them develop their talents and finding their passions!

We decided to try out a new recipe to make again on Dia Del Nino.  We settled on Baked Salsa Chicken Flautas.  This recipe was so easy to put together, and is a perfect meal to get your kids in the kitchen to help out.  Using HERDEZ® Salsa Verde and Salsa Casera, our flautas had such great flavor and our whole family loved them!

Baked Salsa Chicken Flautas

1 roasted chicken, shredded (4-6 lbs)

1 cup HERDEZ® Salsa Verde

8 oz Neufchatel, softened

7 oz whole black beans

7 oz whole kernel corn

14 to 16 – 8 inch flour tortillas

(you can try our homemade tortilla recipe here)

Shredded Mexican blend cheese, for topping

Grated Cotija cheese, for topping

HERDEZ® Salsa Casera, for topping

Directions:

Preheat oven to 350°F.  Prepare two 9×13 pans with olive oil to prevent tortillas from sticking.  Mix your chicken, salsa verde, neufchatel, black beans, and corn together for your filling.  Add a few tablespoons of the filling to your tortilla and roll it tightly.

See, it’s so easy even a 5 year old and 7 year old can do it!  Place the flautas side by side in the 9×13 pan.  Bake for 25-30 minutes until the tops of the tortillas turn golden brown.  Top with shredded cheese, cotija, and salsa casera.
