When I found this recipe from The Recipe Critic, I KNEW I was going to love it! Pasta with a creamy sauce is pretty much Heaven to me! My family loved it too…even if my boys called it “chicken spaghetti”. 🙂 It’s a pretty easy recipe to put together too…and that makes it even better! I added more spices to the cream sauce, because I like it that way. 🙂 Feel free to adapt the spices to suit your tastes.
Tuscan Chicken
Chicken
4 boneless, skinless chicken breasts
3/4 cup flour
1 teaspoon salt
3/4 teaspoon pepper
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
3 tablespoons olive oil
Preheat oven to 350°F. Cover a baking sheet with tin foil and spray foil with non stick spray, set aside. Mix flour and all seasonings together in shallow dish. Cover each piece of chicken in flour mixture. Heat olive oil over medium heat in pan. Brown each side of the chicken for 3-4 minutes. Do not cook all the way through. Place on baking sheet and back for 15-20 minutes until chicken is cooked through.
Sauce
2 tablespoons olive oil
1 red bell pepper, chopped
1 tablespoon finely minced garlic
1 tablespoon flour
1/2 cup chicken broth
2 tablespoons butter
1/2 cup heavy cream
2 tablespoons corn starch
1 cup milk
1 teaspoon salt
1 teaspoon pepper
3/4 teaspoon season salt
1/2 teaspoon granulated garlic
1/2 teaspoon dried oregano
6 oz fresh spinach, chopped
1 cup grated parmesan cheese
In large pot, boil spaghetti noodles until done, do not over cook. In the same pan you cooked the chicken in, add 2 tablespoons of olive oil, red bell pepper and garlic. Saute for 2-3 mins over medium heat. Add tablespoon of flour and stir well for 1 minute. Add chicken broth and butter, stir well until slightly thickened. In small bowl, whisk together heavy cream and cornstarch. Add heavy cream mixture, whisk well. Add milk, seasonings and spinach. Cook until spinach is slightly wilted, continue stirring. Add parmesan cheese, stir until melted. Put noodles in large bowl and stir in half of the cream sauce. Serve with chicken breast and remaining cream sauce spooned over the top. Sprinkle with parmesan cheese. Enjoy!
