I’ve loved our banana bread recipe forever, it’s my favorite treat to make and is the perfect snack. I don’t know why I decided last week to try turning it into blueberry banana bread but I’m so glad I did because the combination is amazing. It was a huge hit with the whole family and has been requested many times since I made it last week.
We bought a huge bag of frozen blueberries from Costco and I’ve been eating them in everything. Have you had frozen blueberries in a bowl of Cheerios? An awesome way to start the morning.
To make our Blueberry Banana Bread Recipe you’re going to need our original Banana Bread Recipe and frozen blueberries (I’m sure you can also use fresh blueberries, I just had frozen on hand and they worked great).
Make the banana bread recipe as normal keeping blueberries out of the mix. Spray your bread pans with cooking spray and sprinkle with a cinnamon and sugar mixture. Fill each bread pan 1/3 full with banana bread mixture. I didn’t measure out the blueberries (sorry about that) I just sprinkled in how many I thought looked like a good amount. I would guess I used about 1/2 cup of blueberries per standard bread loaf pan.
Add blueberries (approximately 1/4 cup) to the bread pan 1/3 filled with banana bread mixture. After adding blueberries add more banana bread mixture to fill the pan 2/3 full. Add more blueberries to the top of the pan (again approximately 1/4 cup) and then sprinkle the top with cinnamon/sugar mixture.
Bake as per Banana Bread Recipe (350 degrees for approximately 50 minutes, however I tend to panic and start checking after 30 minutes) until knife comes out clean. The blueberries will sink as the bread bakes which is why I don’t mix the blueberries into the bread mixture, I didn’t want them to sit on the bottom of the pan.
