Hello! I hope you’re having an amazing weekend. I’ve spent mine finishing taking down and putting away Christmas decor and watching football.
Speaking of Christmas. If you’re like me and have candy canes left over I’m going to help you make good use of them in the simplest, most delicious way. You’re going to want to bookmark this one because you’re going to love them and your family is going to be requesting them often.
I’m more than a little bit addicted to candy canes. I love candy canes so much I keep them on hand year round, if you see a cart of candy canes after Christmas marked down you can bet I’m on my way there to grab them all! Candy canes and dark chocolate are possibly my favorite treat combination which puts this Candy Cane Chocolate Cookie recipe at the top of my weakness list.
Candy Cane Chocolate Cookie
Recipe by Housewives of Riverton
Ingredients:
1 box devils food cake
2 eggs
1/3 c. vegetable oil
pink chocolate melting wafers
crushed candy canes
Directions
Preheat oven to 375°
Combine devils food cake, eggs, and vegetable oil until well mixed.
I used a cookie scoop to scoop onto a baking stone.
Cook for 7-9 minutes.
Let cool on baking stone for 1 minute and then move to cooling rack.
While cookies are cooling melt chocolate wafers as per package instructions and crush candy canes.
Once cookies are completely cool using a spoon coat half the cookie in the pink chocolate and then while still wet sprinkle with candy canes.
Store in air tight container.
What I love the most about these cookies (aside from the chocolate and peppermint) is that the outside is firm but they stay soft and chewy for days when stored correctly. Not to mention they’re so easy and don’t look like it, they come together beautifully and look like you spent a lot of time on them but really they just take a few minutes.Don’t you think they’re just perfect for Valentine’s Day? I intend to make more for the kids for Valentine’s day with a few heart sprinkles mixed in to dress them up a bit more for the day of love! I never seem to have enough Valentine decorations but never have a shortage of Valentine treats.
