I’m not sure why, but Caramel Sea Salt Chip Chocolate Cookies might be the best thing ever. I like my sweets, but there is something about mixing your sweets with a little saltiness or even a little spiciness that just really bump up the flavor. I was at the grocery store and I found some of these caramel sea salt chips on sale…of course I couldn’t say no, so I bought a couple bags. With Spring break, the Easter holiday and a conference I had forgotten about them. Then like always, my kids wanted cookies, I remembered I had these little gems and how could I not make them!
These cookies are soft, fudgey, and have a great chocolate flavor without being overly sweet. This makes about 44-48 cookies so you’ll have plenty for sharing with friends, family, school lunches…or just hiding in your pantry and keeping all to yourself!
Caramel Sea Salt Chip Chocolate Cookies
1 cup unsalted butter, softened
1 cup sugar
1 cup brown sugar
2 eggs, room temperature
2 teaspoons vanilla extract
2 cups unbleached flour
1 cup unsweetened cocoa powder
2 teaspoons baking soda
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/4 cup milk
1 package caramel sea salt chips
Directions:
In stand mixer, using paddle attachment cream your butter until smooth. Scrape down sides, then on medium-high speed add your sugar and brown sugar. Mix until smooth. Add eggs one at a time, mix until combined. Mix in vanilla. Scrape down sides and bottom of the bowl.
In a medium mixing bowl, whisk flour, cocoa powder, baking soda, salt, and nutmeg. Mixing on low, add dry ingredients to the wet ingredients. Bump up your mixing speed to medium and add in milk, once that is combined mix in your caramel sea salt chips. Cover dough with plastic wrap and refrigerate for 2 hours.
Preheat oven to 350°F. Let dough come to room temperature for 15-20 mins. Using a 2 oz scoop, scoop cookie dough onto your cookie sheet. Bake for 10 minutes. Cookies will look soft. Cool for 3-5 mins on the cookie sheet and then move to a cooling rack.
