These Caramel Candy Corn Cookies are the perfect way to use up all your extra candy corn from Halloween!
There’s just something about Fall and candy corn…they go hand in hand! So I decided to make some yummy cookies with one of our favorite treats in them.
Candy corn seems to be one of those polarizing things that either people love it or they hate it. Over here we are definitely team candy corn! After Halloween when we had a few handfuls left over, so I decided to give them new life in these tasty Caramel Candy Corn Cookies!
Caramel Candy Corn Cookies
1 3/4 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar, packed
3/4 teaspoon vanilla
1 egg
6 caramels, chopped into very small pieces
1/3 cup candy corn, roughly chopped
Directions:
Preheat oven to 375°F.
Combine flour, baking soda, salt, cinnamon, and nutmeg into a small bowl.
In mixing bowl cream butter until it’s smooth and fluffy.
Add sugar, brown sugar, and vanilla.
Add egg, mix until well combined.
Mix on low and slowly add in flour mixture.
Mix until just combined.
Stir in caramel and candy corn pieces.
Combine flour, baking soda, salt, cinnamon, and nutmeg into a small bowl.
In mixing bowl cream butter until it’s smooth and fluffy.
Add sugar, brown sugar, and vanilla.
Add egg, mix until well combined.
Mix on low and slowly add in flour mixture.
Mix until just combined.
Stir in caramel and candy corn pieces.
Next, scoop onto parchment lined cookie sheet, I used a mounded 1 ounce scoop. Then bake for 8-10 minutes. Also, make sure you don’t over bake, or else your candies will melt out of the cookie. Then cool on cookie sheet for a few minutes and then cool on a rack. Enjoy!

These look fabulous! I tried something like this, and they were good… but these look WAY better! I love the idea of the caramel w/ the candy corn and can’t wait to try these!!

Hi Amanda! You could use parchment paper baking sheets or a silpat baking mat to help with the sticking. 🙂
