Chicken Pasta Caesar Salad

By Creative Housewives 3 Comments

Last week we had our monthly Girl’s Night Out (formerly known as Card Swap).  Our friend Kristin hosted and we had a great night hanging out and visiting.  The reason for this post however isn’t to tell you about the fun we had it’s to tell you about the AH-mazing salad she made.  I’ll be honest, when I first saw pasta in the salad I was a little skeptical but it is now my favorite salad, seriously, 100% my favorite.  It was delicious and isn’t really just a salad, it can totally be a main course too.
Ingredient list:
Romaine Lettuce
Croutons
Slivered Almonds
Penne Pasta
Grape or Cherry Tomatoes
Chicken
Creamy Caesar Dressing
Kristin said she’s used this Tyson Grilled and Ready chicken, cooled rotisserie chicken, and cooled grilled (think leftovers) chicken breasts.
All measurements will depend on how big of a salad you are making.  Hopefully this photo will help you see the ratio.  She used the Brianna’s Creamy Caesar dressing, I highly recommend it but if it’s not available whatever creamy caesar you like will be just fine.  Also whatever croutons you like are great but these Rothbury Farms Cheese Garlic ones are tasty!
The one downfall to this deliciousness.  It is not a salad that you can make big to have leftovers.  Because you’re mixing everything together it will be a soggy mess if you try to keep it overnight or make it too far in advance.  It is however awesome for big gatherings because it’s easy to make into a big salad.  So, if you’ve got a BBQ coming up (or a church event or just a family dinner) bring this and WOW everyone!  Thanks for letting me share your recipe Kristin, you’re the best.

    Jenn,

Is there a way that you can arrange your recipes, so that we can hit the “print” and print the recipe? I hope I am explaining this right. There may already be a way and this old, old lady doesn’t know how to do it. I love these recipes that have been posted lately.

We’re working on it! I promise. I just am not very computer savvy either
