I know when the new year starts we all try to eat healthier but let’s face it sometimes you can only drink so much water and eat so many vegetables before you just want something sweet. A few years ago my friend made these chocolate covered peanut butter balls and brought some over to our house. I remember thinking they looked a little funny and I hadn’t ever seen anything like them before, but once I took a bite it didn’t matter because they were so delicious. My friend called them Buckeyes. Apparently they get their name from the resemblance of a buckeye tree. They taste similar to a peanut butter cup but the texture is creamier. If you put them in the fridge they get a little chilled and they are pure heaven. I will warn you the bad thing about putting them in the fridge is you will want to pop one in your mouth every time you open your fridge. Just remember I did warn you!
Chocolate Peanut Butter Buckeyes ingredients:
1/2 stick butter
1 1/2 cups of creamy peanut butter
4 cups of confectioners (powdered) sugar
1 tsp. vanilla
2 Tbsp. shortening
12 oz. semi-sweet or milk chocolate chips ( you could also use the melting chips)
wax or parchment paper
toothpicks
Chocolate Peanut Butter Buckeyes directions:
First cream butter and peanut butter together then add sugar and vanilla. Mix all together. The dough does get a little thick so you may want to dig in and just use your hands!
Shape into 1- inch balls and place a toothpick in each ball. Next place them on waxed paper and refrigerate for 30 minutes.
Melt the chocolate chips with the shortening. If you don’t have a double boiler place a glass bowl over a small pot with a few inches of water inside the pot. You want to make sure the bowl doesn’t touch the water. Place the chocolate chips into the bowl with the shortening and the steam will melt your chocolate and it will keep it nice and smooth. You will want to adjust your temperature to make sure it doesn’t get too hot.
Once your chocolate is melted dip the peanut butter balls into the chocolate by holding the toothpick and covering all but a little circle on top. This will make it look like a buckeye.
Now the hard part is waiting for them to cool and harden so you can eat them. This is why I put them into the refrigerator and I was glad I did!
