Recently we had a party at church celebrating the birthday of the organization of the Relief Society. It was a great night and a great opportunity to visit with the other women in our neighborhood. We enjoyed a nice dinner, visiting with each other, an uplifting program, and then of course dessert. As part of the evening they asked some of us women to bring cupcakes to share. I had signed up to bring cupcakes and after baking chocolate chip cookies the day before I decided I wanted to try a simple Chocolate Chip Cookie Cupcake. I looked around a bit online and found quite a few cookie dough cupcake recipes which wasn’t quite what I wanted so I decided to make up my own. The good thing for you is, if I’m creating them on my own they’re guaranteed to be about as simple as you can imagine. Initially I planned to use the cookies I made in my Chocolate Chip Cookie Cupcakes but I found out pretty quickly that my love of a soft chocolate chip cookie doesn’t work well for a Chocolate Chip Cookie Cupcake (PS already you can’t imagine how many time I’ve typed Chook…before realizing I was combining words…it’s quite the tongue twister Chocolate Chip Cookie Cupcake!). You’re definitely going to want a more crisp cookie, this means you either need to buy some or make sure you make yours just a little less chewy for this recipe.
Chocolate Chip Cookie Cupcake Recipe:
To make these cupcakes you’ll need:
1 box yellow cake mix batter prepared as per package instructions
Chocolate Chip Cookies, you’ll want crunchier cookies for this, think Chips Ahoy or the store bought ones that come in the brown bags with the little window.
Milk Chocolate Frosting
I wanted these cupcakes to be EASY and I promise they are, the great thing is that even though they’re super simple they taste delicious. I’ve made them three times now and every time people are coming back for more.
Prepare your batter as per the instructions on the box.
Take approximately 3-4 cookies and crumble them up, you don’t want them a powder, some bigger chunks at this point are desirable.
Fill cupcake liner approx 1/4 full with batter.
Sprinkle in some cookie chunks.
Add more batter filling your cupcake liner to 2/3 full (don’t fill fuller than 2/3 full).
Optional – add more cookie crumbles to the top and using a toothpick push into batter.
Bake cupcakes as per package instructions.
Remove cupcakes from oven and let cool completely.
Crumble 2-3 more cookies, this time you’ll want them more powdery.
Frost cupcakes.
Immediately after frosting (before frosting can harden) sprinkle with cookie crumbles/powder.
For an added cute touch I cut cookies into fourths and stuck them into the top of the cupcake, that way everyone knew what kind of cupcake they were getting.
See, super simple! I love that these taste so good but take no more time really than making a regular cupcake and people will be so impressed!!!
