I love making a cookie recipe that turns out perfectly. That’s exactly what happened with these delicious Coconut Lime Cookies. I had some limes that were meant for another recipe that didn’t pan out, and I didn’t want them to go bad. Sure, I could have sliced them up and used them in the boring water that I’m forcing myself to drink, but let’s be honest…cookies are a much better idea!
This recipe brings out the delicious flavors of both the coconut and the lime while having a buttery cookie base. So go grab your ingredients and let’s get going on these bad boys!
Coconut Lime Cookies
1 cup (2 sticks) butter, softened
3/4 cup sugar
1 egg yolk
1/2 cup shredded coconut
2 tablespoons lime zest
2 tablespoons lime juice
2 tablespoons cream of coconut
2 cups flour
Coconut Lime Glaze
1 cup powdered sugar
2 tablespoons lime juice
2 tablespoons cream of coconut
1 tablespoon lime zest
toasted coconut for garnish (optional)
Directions:
Preheat oven to 350°F. In stand mixer, cream together your butter and sugar. Once combined, add your egg yolk. On low/medium speed, mix in shredded coconut, lime zest, lime juice, and cream of coconut. Scrape down sides and mix in flour. Line a baking sheet with parchment paper, using a two ounce scoop, scoop out dough onto cookie sheet. Bake at 350°F for 11-13 minutes. Mine were perfect at 12 mins. You will see the bottom edges start to barely brown. The tops won’t be brown at all. These are a soft cookie, so make sure you don’t over bake. Let cool on the cookie sheet for a couple of minutes and then move to a cooling rack to finish cooling. While your cookies are cooling, mix together your glaze. This glaze will be a touch thicker than you would expect. It will be a smooth mixture and you will spoon about a teaspoon onto each cookie, using the back of the spoon to spread it around. Top with toasted coconut before the glaze dries.
The cookie itself is not very sweet, and the glaze is very sweet…together they make the perfect combination! This recipe yields 24 cookies, but the recipe can easily be halved or doubled depending on how many you need.
