Casey’s girlfriend Lacey turned 22 this week and I had so much fun making her these cowboy hat cupcakes. She is such a cute girl that loves horses, hunting and cowgirl boots so they were perfect for her.
I started with making the cupcakes pink camo. I love this recipe because it makes a very soft creamy cupcake. The secret to the colors not fading into each other is the cream cheese. They really have an amazing texture.
You will need:
8 oz. package of cream cheese softened
2 egg whites
1/4 cup vegetable oil
1 box white cake mix
1 cup water
1 tsp. vanilla
Preheat oven to 350. In large bowl combine the cream cheese, egg whites, and vegetable oil. Using a mixer to beat the ingredients until combined and creamy. This step is very important, I’ve made this recipe before and had them turn out flat and hard and I believe it was because I didn’t mix it long enough during this step.
Next, add the cake mix, water and vanilla and mix until smooth, about 3 minutes.
Divide your batter and mix colors then spoon each color into the muffin tin.
Bake 18-20 minutes.
The hat is pretty easy to make. You will need rope licorice, pringles and gum drops. I had a little trouble finding the clear color big gum drop. Winco ended up having them in their candy bins.
You will mold the gum drop to a triangle shape and then clip the top with your scissors to look like a hat. Then with icing stick it to the pringles chip and finish by put the licorice around for the band.

Did the chip get soggy on top of the frosting?
They were made the day they were eaten and there wasn’t a problem with them getting soggy for us, I can’t say if they’re made ahead of time if it would be a problem. If you make them, please let us know how it works for you. Thanks.
You could coat it in white chocolate to match any gumdrop color, thus it stays crisp and you can have other colors.
Where did you find the white gumdrops
We found them in the bins in the bulk candy section.
