I’ve said before how blessed I am to have kids who are not picky eaters. They will try anything once and usually as long as I’m giving them food, they are happy with it. But I know there are a lot of kids out there who are reluctant to try new things, eat veggies, fruits, meats, etc. One of the best ways I’ve found to get my kids to try something new is to make it fun! Find a way to incorporate their favorite ingredients and flavors. My kids, like most, love Goldfish® crackers! They are the perfect snack to throw in your purse to have on hand when your kids need a quick bite to eat. Trust me, nothing will make a kid smile bigger than when you pull out a bag of Goldfish crackers!
We love creating delicious and fun recipes in our kitchen, so I thought it would be really fun to incorporate Goldfish crackers in a bite-sized snack that I could have ready for my kids after school. I wanted it to be something I could feel good having them eat and knowing that it was a wholesome way to help fight off the hunger pangs until dinner time. Because my kids love broccoli and cheese, I thought it would be fun to mix in crushed up Goldfish made with whole grain Cheddar crackers and make Goldfish Cheddar Broccoli Bites! They were a HUGE hit with my kids, and I have to admit, I found myself snacking on a few also! The best part, it only takes a few ingredients that you most likely already have in your kitchen!
Goldfish Cheddar Broccoli Bites
2 cups broccoli, cooked and chopped
1 cup cheddar cheese, shredded
3/4 cup Goldfish crackers, crushed
1 egg
1/4 cup Goldfish crackers, crushed for topping
Directions:
Preheat oven to 350 degrees. In a food processor combine all ingredients except the 1/4 cup crushed Goldfish crackers. Make sure they are well combined, but not mushy. Using non stick cooking spray, spray a mini muffin pan. Spoon in mixture to pan, filling each cup about 3/4 of the way full. Top with remaining cracker crumbs and bake for 12-14 minutes. Tops and sides will be lightly golden brown. Let cool for 3-5 minutes, remove from pan and serve. They are best when they are warm!
Like I said, a super easy recipe that can be put together, baked and ready to serve in less than 20 minutes! They are a great snack, and if you wanted you could double the recipe, make them in a regular size muffin pan and use them as a side dish for a meal. Your family will have giant smiles all day after eating this!
