Tomorrow is National Pancake Day (is it just me or does it feel like there are 10 different Pancake Days a year?!) Our family loves breakfast for dinner. I know that no matter what, if I say I’m making pancakes for dinner my family is going to be happy! These Cinnamon Buttermilk Pancakes will for sure be a hit with your family too!
I almost always have premade pancake mix on hand, but this recipe is so easy I tend to use it often because of how delicious, light and fluffy these pancakes turn out. If you want, you can add blueberries, strawberries, bananas, anything you want to customize it to your family’s preference! You can also get your kids in the kitchen to help you measure and mix up this recipe!
Cinnamon Buttermilk Pancakes
4 cups flour
3/4 cup sugar
1 tablespoon baking powder
2 teaspoons baking soda
1 1/2 teaspoon ground cinnamon
1/2 teaspoon salt
4 cups buttermilk*
1 tablespoon vanilla
2 eggs
1/2 cup melted butter
*If you don’t have buttermilk on hand, fear not! You can make your own! Pour 4 1/2 tablespoons of vinegar or lemon juice into a large measuring cup. Add milk to make one cup. Let sit for 15 minutes…voila! Buttermilk!
Directions:
Combined all your dry ingredients, then add your wet ingredients and milk well. Pour 1/4 cup at a time on to hot griddle and cook each side for 1-2 minutes until done and golden brown. Serve with your favorite syrup or toppings. Makes approximately 34 four inch pancakes. If your family won’t eat that much you can half the recipe, or you can make the whole amount and freeze the extras. It makes for an easy morning just popping some homemade pancakes in the microwave.
