Homemade Chicken Salad is one of those things that remind me of Summer. It has such a fresh, crisp taste that’s perfect on a hot day. I also love it because you can use rotisserie chicken, or left over baked chicken. Everyone has their favorite recipe for chicken salad, so of course I had to share my version. This version is creamy and the flavors are just amazing.
Homemade Chicken Salad
1 whole rotisserie chicken, shredded and chopped
8oz cream cheese, softened
3/4 cup mayonnaise
2 teaspoons mustard
3 celery stalks, chopped small
2 green onions, chopped thin
1/2 cup craisins, roughly chopped
1/4 teaspoon salt
1/4 teaspoon pepper
Directions:
Place your shredded and chopped chicken in a large bowl. Mix in celery, green onions, and craisins. In a medium bowl, mix your cream cheese, mayonnaise, and mustard until smooth. Mix in salt and pepper. Combine cream cheese mixture with your chicken mixture until well combined. Keep refrigerated until needed, if you can have it sit overnight, the flavors really stand out even more!
