After our trip to Oregon, we spent a few days in Idaho with my aunt and grandma. While we were there, we grilled out and made these amazing Marinated Shrimp and Chorizo Skewers. They were so perfect for summer and taste amazingly wonderful!
Now I have to confess, before eating these shrimp skewers it had been at least 15 years since the last time I had tried shrimp. I know, crazy right?! A roommate of mine had made jumbo shrimp fajitas and the texture of the shrimp but just did me in and I couldn’t eat it. I honestly thought there was something wrong with me because it seemed like everyone liked shrimp but me. I’m so glad I gave it a try again with this recipe! It was amazing!
Marinated Shrimp and Chorizo Skewers
25 large shrimp, peeled and deveined
25 slices basque chorizo, sliced 1/2 inch thick
1/4 cup olive oil
1 tbsp chili powder
1 tsp oregano
1 tsp salt
1/2 tsp pepper
2 garlic cloves, minced
25 skewers
Directions:
If you are using wooden skewers, soak the skewers in water while you are preparing your shrimp marinade to keep them from burning on the grill. Whisk together all of the spices with the olive oil. Toss the shrimp in the marinade and set to the side. Slice the basque chorizo into 1/2 inch slices. Take a chorizo coin and wrap a shrimp around it. Skewer through the shrimp and the chorizo. You should be able to fit 5 shrimp/chorizo on each skewer.
When you have your skewers ready, get them on your grill. We grilled ours on medium/low and kept a close eye on them. You’ll want the shrimp to be firm and no longer opaque in the middle. You can also adjust the spiciness of the skewers by using a spicier chorizo. Serve with your favorite sides and enjoy!
