For me, Halloween is the beginning of the holiday season. Fall is setting in, the cooler weather is here and in my opinion it’s the BEST time for baking. I decided to start out my treat baking with some delicious Orange Fanta Cupcakes with OREO Cookie and Cream Frosting.
For some reason, things are always cuter in small packages! I love that these OREOs come in 2 cookie packages with a super fun glow in the dark package! And how fun are these mini cans of Orange Fanta?! Put these together and they would make a great Halloween party favor. I decided to pair them in a different way! Because I love baking so much, I knew that I wanted to make an Orange Fanta Cupcake. I decided to use the OREOs to make a cookie and cream frosting to top my cupcakes.
Orange Soda Cupcakes
1 3/4 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs, room temperature
3/4 cup sugar
1 1/2 teaspoon vanilla
1/2 cup oil
3/4 cup Orange Fanta, opened to go a little flat
1 teaspoon orange zest, optional
2-3 drops orange food coloring for more vibrant color, optional
Directions:
Preheat oven to 350°F. In bowl, mix flour, baking powder, baking soda and salt. Set aside. In stand mixer, mix eggs and sugar until smooth. Add vanilla, oil, orange zest, and food coloring. Slowly add flour mixture until well combined. Lastly, slowly add Orange Fanta until combined. Don’t overmix. Fill cupcake liners about 2/3 full. Bake for 14-18 minutes, or until a toothpick comes out clean. Cool completely before frosting.
I’m so glad I added a couple drops of orange food coloring, it really helped the color pop to make the cupcakes a little more Halloween-ish!
OREO Cookie and Cream Frosting
10 OREO cookies
2 sticks (1 cup) butter, room temperature
2 cups powdered sugar
1 teaspoon vanilla
Directions:
Take apart OREO cookies, placing filling in a separate bowl from the cookies. Finely crush cookies. In mixer, beat butter and OREO cream together until smooth. Next add vanilla. Slowly add powdered sugar, mix until smooth. On low speed, add crushed OREO cookie crumbs until just combined. Frost cooled cupcakes and serve.
You can find these awesome OREO Cookies with Glow In The Dark packaging at Walmart. I found them on a display by the cookie and snack aisle.
