If there is a recipe in our house that we always have every ingredient on hand for it’s this Taco Soup Recipe. It makes me happy that everyone in the family enjoys it so much as I appreciate every recipe I can put in the slow cooker in the morning and have ready for dinner that evening. It’s also great because there are a couple different ways we can change it up so we don’t feel like we’re eating the same thing as often, if I put it in first thing it’s ready for everyone to throw in a thermos as they head in all their different directions, it reheats like a dream, and it’s delicious and easy.
I shared my recipe for taco soup what feels like 100 years ago here on the blog and while the recipe hasn’t changed much I have from time to time changed it up. The original recipe can be found here. Lately I make it as follows:
Slow Cooker Taco Soup Recipe:

1lb browned ground beef
(seasoned with garlic salt and oregano to taste)
2 cans pinto beans
2 cans black beans
2 cans kidney beans
2 cans great northern beans
1 can garbanzo beans
2 cans corn
4oz can olives chopped
taco seasoning to taste (approximately 4TBSP)
2 cans rotel
Dump your browned seasoned hamburger into your slow cooker, open all your cans and pour them in. Do not drain any of your cans. Mix it all up really well. You shouldn’t need to add any water (however if for some reason my slow cooker doesn’t end up all the way full I add water to fill it up).
Cook on low 4-6 hours.
Serve with shredded cheddar cheese, sour cream, and of course your favorite corn chips (you can also add salsa which we love).
One of my favorite ways to change the recipe up is to add shredded chicken instead of ground beef, I am not sure why but I feel like it makes it a bit more creamy and we love it just as much as the original recipe.
Another option, if your family isn’t a huge fan of leftovers (or you just want to try something new) we loved loved loved this Taco Soup Casserole recipe. Makes it worth it to make a big pot of soup the first time so you can have left overs for this recipe too.
