St. Patrick’s Day homemade Oreo cookies

St. Patrick's Day Homemade Oreo - housewivesofriverton.comI have a confession to make…I went way too many years of my life never having a homemade Oreo cookie.  How is that even possible?  The first time Angela brought them to a family function it was bad…so so so bad.  Oh and by bad I mean bad for my waistline because the only word to really describe these cookies is ah-mazing!!!
When Angela shared her Halloween homemade Oreo cookies it really got my mind spinning on all the cute ways to dress these cookies up for the different holidays.
St. Patrick's Day homemade Oreo cookies - housewivesofriverton.comI think these St. Patrick’s Day homemade Oreo cookies turned out so fun.  They just make me smile every time I look at them (or even the pictures of them).  The best thing about these cookies is how delicious they are.  The second best thing about these cookies is how quick and easy they are.  I always have everything on hand to make them and they take no time at all, in fact I made these while making breakfast and packing lunches all before the kids headed to school.

Recipe:
1 Box Devil’s Food Cake
1/3 cup Vegetable Oil
2 Eggs
Frosting (traditionally I use cream cheese frosting
but for these I used a can of bright green frosting)
Rainbow Sprinkles
Directions:
Preheat oven to 350°
Mix devil’s food cake, vegetable oil, and eggs together.  Batter will be thick, much more like cookie dough than cake batter.
Using a 1oz scoop, scoop dough onto cookie sheet (I prefer baking stones).
Bake 8 minutes.  Cool on cookie sheet for 3 minutes and then move to cooling rack.
Once cookies are cool using a generous amount of frosting make a cookie sandwich and then roll edges of frosting in sprinkles.
Tip – since each St. Patrick’s Day homemade Oreo cookies is really two cookies it helps to make them small.  Using the 1oz scoop helps keep them small in size and helps the finished cookie size be consistent which is nice when making the sandwiches.
st patrick's day homemade oreo cookies - housewivesofriverton.comMy kids are going to be so excited when they get home.  They love holiday specific treats almost as much as I do and really these ones are so bright and cheery, I know they’re going to love them.
While I call these St. Patrick’s Day homemade Oreo cookies they’d also be great for a birthday party.  The bright rainbow colors would work for a large variety of party themes.
