I love having the time to make a really delicious dinner for my family! And I love it even more when the recipe I use is easy! ๐ For this recipe you are going to need
4 medium/large boneless,skinless chicken breasts
8-12 slices of bacon
1 8-10oz carton of cream cheese (onion and chive flavor (whipped) or italian cheese and herb flavor (cooking creme))
5 tbsp butter
Salt and Pepper
First, preheat your oven to 400°F
Next you are going to take one chicken breast at a time and flatten it. If you have a mallet to do this, that would probably be helpful…
I don’t, so I use a plate. ๐
You want to make sure it’s pretty flat because you will need to roll it up. I figure about half the thickness of what it started out as.
Next we are going to take our cream cheese. This time I used the Cooking Creme Italian Cheese and Herb. It spread very easily and it has a really good, smooth flavor.
I just used a regular spoon and dolloped about a spoonful and a half on to the chicken breast and used the back side of the spoon to spread it around.
After your cream cheese is spread out, cut each tablespoon of butter into four equal parts and put five parts onto your chicken breast.
Now I couldn’t roll and take pictures at the same time, so you only get a pic of what they look like all rolled. First you will roll up your chicken breast and place it seam side down on the pan. Some of the cream cheese will squish out and that’s okay. (I usually scoop it up and stuff it in one of the ends. :-))
Next you will take a slice of bacon and wrap it around the chicken breast. I had pretty thinly sliced bacon so it took me three slices to get it all wrapped. Feel free to use pepper crusted bacon, hickory smoked…whatever…it will only enhance the flavor!
Bake for 35 mins and then check the temp with a meat thermometer. After the initial 35 mins, I put it in for another 5-8 mins to make sure that it was done completely thru.
After your chicken is baked thru, broil the chicken for 3-5 mins to get the bacon good and crispy.
Your finished product will look like this! Crispy and brown on the outside…
Moist and cream cheesey on the inside!! ๐
Another great alternative on this is instead of using cream cheese on the inside, use a slice of ham and shredded cheese for a “cordon bleu” taste! Hope you all enjoy your delicious dinner!!
