I have a lot of zucchini from my garden already. Every summer it seems to grow well in our garden so we end up with more than we can eat every year. We have a few dinner recipes we always make using the zucchini, but to be honest not all of my kids like the taste of it so I wanted to try some different ways to use the zucchini. I figured a zucchini cookie would be a good way to start. I knew there was a good chance of them liking the cookies and they probably wouldn’t even know that I put zucchini in them unless I told them. I was right, all of my kids didn’t realize there was zucchini in them until I told them and they were a huge hit! I’m sure the cream cheese frosting helped, but these zucchini cookies are so soft and delicious and it made me feel like it was a healthy cookie because they had a vegetable in them.
Ingredients you will need to make Zucchini Cookies:
1 c. shredded zucchini ( I used my cheese grater)
1/2 c. sour cream
1/2 c. brown sugar
1/3 c. sugar
1 egg
3 tsp. vanilla
2 cups flour
1/2 t. baking soda
1/2 teaspoon cinnamon ( I added a little more )
1/2 teaspoon salt
Zucchini Cookies Directions:
Preheat oven to 350. Before mixing the ingredients together, gently squeeze out any extra water out of the zucchini with your hands. In a large mixing bowl mix the zucchini and both sugars, egg and vanilla together. In a separate bowl add the flour, baking soda , salt and cinnamon and mix it all together. Add this to the zucchini mixture and mix well, dough will be a little runny. Bake for 12-13 minutes. Leave cookies on cookie sheet for at least 5 more minutes to bake. After cookies have completely cooled frost with cream cheese frosting. I used the canned frosting because it’s easy and still tastes good, but if you have the extra time homemade cream cheese frosting would be delicious. I sprinkled a little cinnamon on each cookie also.
The sour cream in this recipe makes these cookies so soft and delicious!
These Zucchini cookies were definitely a hit with my whole family. My kids LOVED them so much and they are already asking me to make them again. Good thing we have plenty of zucchini to go around so we can enjoy these cookies all summer long! If you have some zucchini sitting around this summer and don’t know what to do with it.
