It seems like forever ago that I was at a church activity and we got to have Hawaiian Haystacks. I loved the Teriyaki Chicken with the pineapple and crunchy chow mein noodles! I can’t remember at all how they were made so I just went with what I could remember and it turned out pretty dang good! Josh did a lot of the prep work, he was super excited to get to do the chicken on the smoker. ๐ First we used the baby bell peppers and pineapple that we got from our Bountiful Basket, chopped them up…
Then we skewered them to make them easier to roast on the grill.
Next we put the chicken on the grill. We had VERY thick chicken breasts so we butterflied them to make them a more reasonable size. I strongly suggest you marinade your chicken in your teriyaki sauce and baste it while grilling. We didn’t marinade and had to add more sauce after the fact.
If you don’t have a smoker, you can use your BBQ. If you don’t have either, just saute it up in a pan…it will work great! ๐
I love the grill marks! The teriyaki sauce really helped keep the juices in the chicken it was SO delicious and moist!
When we put the chicken on the grill, we knew it would take about 20 mins for it to cook. So we started our Jasmine rice at the same time, because it also takes about 20 mins. The skewers took about 5-10 mins cook, so be sure you don’t put them on too early.
Next you can assemble your haystacks. If you have older children, it can be fun for them to make their own too!
Put some rice down first and then cut up as much chicken as you would like and put it on top.
Take your skewer sticks out of your veggies and pineapple and throw those on top also. Like I said before, I love to add the chow mein noodles for crunch…and they taste good too!
My husband grilled up pineapple rings too, to top it all off! I loved how it turned out! There is no real recipe for this…use whatever kind of produce you want to make it your own. Enjoy!
