I don’t know about you, but one of my favorite things from Olive Garden is their Unlimited Soup, Salad and Breadsticks. The Zuppa Toscana soup is so delicious! When I received my Bountiful Basket, it had this fun little bundle in it…
To me it LOOKED like what was in Zuppa Toscana, but I had no idea if that was right or even what it was called. Thanks to all my wonderful blog friends, I learned that it was called Curly Kale and that was indeed an ingredient in the Zuppa Toscana. I was on a mission! I cruised through lots of copy cat recipes until I found one that had the very best feedback, and then I proceeded to make it my own. 🙂 Lucky for me I had everything on hand but the Italian sausage. I chose a mild sausage because I don’t do real spicy very well and neither do the boys.
So here it goes! I hope you all try this and love it as much as we did!

In the pot you will be cooking your soup in, brown your sausage.
I used my awesome mix n’ chop from The Pampered Chef to make sure it was more of a ground beef texture. After it’s browned, take it out of the pot and put it in a bowl to the side.
Now back in that same pot add your water, chicken broth and garlic. Bring that to a slow boil.
While that is coming to a boil, chop your potatoes and onion. Once your liquid is boiling, turn it down to medium and add the onions and potatoes. Cook until potatoes are tender.
At this point your kitchen will start to smell SO delicious you will be salivating!
Now chop up your kale. When the potatoes are tender add the cup of heavy cream and the kale. Salt and pepper to taste and then let simmer for about 10 more mins. Then it will be ready to serve!
Serve with breadsticks (or rolls work great too!) and enjoy!!
My boys really loved this. R gobbled his up so fast I couldn’t believe it. C did great but thought it tasted SOOO much better with me feeding it to him…stinker! H…he picked out all the kale but then looked like this…
Watching him eat it was SOOO cute! He was not at all happy when I took his empty bowl away to put him in the tub.
