Okay, who didn’t see these beautiful, delicious treats all over pinterest?!
This came from Nutmeg Nanny! When I first saw this I KNEW as soon as strawberries came into season I’d be making them! ๐ I did adapt her recipe very slightly, so I’ll show you what I did.
Cheesecake Filled Strawberries
Recipe Adapted from Nutmeg Nanny
Yields approx. 35 depending on strawberry size.
Approx 2lbs strawberries
8oz softened cream cheese
3 tablespoons powdered sugar
1 teaspoon vanilla
6 drops lemon juice
2 graham crackers
First you want rinse your strawberries, trim off the stem and hull it. I used a paring knife, but by the last strawberry I was WISHING I had a strawberry huller!
While I let those dry on a paper towel, I made my cheesecake filling!
Cream together all your ingredients in a bowl…
Transfer your filling into a pastry bag or a ziplock with a hole cut in the corner. I used my star tip to make them cute. Fill each strawberry.
Next take your graham crackers, put them in a baggie and roll over it a few times with your rolling pin. It made the cracker crumbs nice and fine.
Lastly you are going to dip the filling end of your strawberries into the crumbs until well coated.
See how pretty and delicious they look?! I think next time I might dip the strawberries in chocolate too! How yummy would that be! ๐ Enjoy!
