Crispy Cheesy Chicken

So I’m sure lots of you have seen a similar recipe to this floating around Pinterest. 🙂  It looked super amazing to me and I found this recipe from Jamie Cooks It Up.  I adapted it a bit for some more flavors that I knew my family would enjoy.

Crispy Cheesy Chicken
(Adapted from Jamie Cookies It Up)

Chicken:
2.5lbs of boneless, skinless chicken tenders
2 sleeves of Ritz crackers
1 cup of milk
2 – 2.5 cups of shredded cheddar cheese
3 oz of French’s Fried onions

Sauce:
1 can Cream of chicken soup
4 tablespoons sour cream
3 tablespoons unsalted butter
1/2 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon granulated garlic

Directions:
Preheat your oven to 400°F.  Roughly crush crackers and onions together in a shallow bowl or dish.  Pour milk and cheese in separate shallow bowls or dishes.  Dip chicken tenders into milk and place in shredded cheese.  Push tenders down into the cheese to help it stick.  Next place into cracker mixture and coat.  Place on baking sheet that has been lightly sprayed with nonstick spray.  Once all tenders are on your baking sheet, use extra cracker mixture and cheese to top off the tenders for a little more crunch.  Cover loosely with tin foil and bake for 20 mins.  Uncover and bake for an additional 10 mins.  Check internal temperature with a meat thermometer to make sure chicken is cooked through.
In a small sauce pan over medium heat, combine cream of chicken soup, sour cream and butter.  Use a whisk to create a creamy sauce.  Add in pepper, salt and garlic.  Feel free to add more or less of the seasonings to your taste.  Top chicken with your desired amount of sauce and enjoy!

    This looks so delicious! I love that it has familiar elements to other recipes, but is its own thing entirely!
