You may have noticed that every few months, I am a part of an Ultimate Recipe Challenge. This month’s challenge ingredient is chocolate. It may sound super easy to do a chocolate recipe, but it was actually difficult for me because there are so many delicious chocolate recipes that I’ve been dying to try. Trying to narrow it down was really hard! Finally, I settled on some delicious Double Chocolate Chip Muffins.
Double Chocolate Chip Muffins
1 – 18 oz box Devil’s Food Cake mix
2 tablespoons flour
2 tablespoons cocoa powder
3 eggs
2/3 cup milk
1/2 cup butter, melted
1 teaspoon baking powder
1/4 teaspoon nutmeg
1 1/4 cup chocolate chips
Directions:
Preheat oven to 375°F. In stand mixer, mix together cake mix, flour, cocoa powder, baking powder, and nutmeg. Next mix in your eggs, milk, and melted butter until well combined. Stir in chocolate chips. Scoop mixture into prepared, lined muffin tins. I use a 3 oz scoop and it’s the perfect amount for each one. Bake for 18-20 mins. You want them to be baked through, but not overbaked. Cool in muffin tin for a few minutes and move to cool completely on a cooling rack.
These muffins are a great copy cat of Costco muffins. Even though a cake mix is used to make these, they aren’t overly sweet and are rich and delicious. And a bonus is that they are smaller than the Costco ones, so you don’t feel bad for eating a whole one by yourself! It’s also a great recipe to let your kids help with. Using a scoop makes it really easy, even my three year old helps!
