I don’t live a gluten free lifestyle, but I know from some of my wonderful family and friends who have illnesses that require being gluten free, that it can be hard to find yummy recipes that are similar to what they are used to. I decided to try my hand at Gluten Free Applesauce Pancakes. After a few missteps I was so glad to have figure out how to make these delicious, fluffy pancakes! These aren’t exactly the same as buttermilk pancakes, but they are super yummy! My kids loved them and ate them with no problems. I thought the texture was wonderful and am looking forward to making them again. Because the batter is different from regular pancakes, these to require a little more work, but they are totally worth it!
Gluten Free Applesauce Pancakes
2 eggs
1/3 cup unsweetened applesauce
1/2 teaspoon vanilla
1/2 tablespoon honey
1/4 cup almond meal
1/2 teaspoon baking powder
1/2 tablespoon sugar
pinch ground cinnamon
2 tablespoons gluten free flour blend (I used Pillsbury Gluten Free Flour Blend)

I don’t cook gluten free often (because I love carbs too much) but these pancakes look really good! I may have to give them a try this weekend!
