Gluten- Free Cookies – Oatmeal, Chocolate Chip, and Peanut Butter {no flour}
Recently Angela and I had the opportunity to go to a cute shop up in Kaysville, Utah called To Market. We had a great time, I loved the shop, I bought a few items and am enjoying them in my home. What was especially amazing was that there were these cookies…oh my heavens, they were amazing.
Hollyhocks & Honeybees brought her cookies to share with all of us and we were all so very happy to have some. I had to restrain myself from eating like 10 {I’m not always the best at sharing…just ask my kids}. I was so happy when she said the recipe was on her blog. Ang and I both headed right over there and had made them within the week.
This week I decided to try changing up the recipe just a little bit to make them cute and colorful for Easter and spring and also to make them fully gluten-free. Since they already don’t have flour the process wasn’t difficult at all {we are not a gluten-free family but like Paula have people I love who have to be gluten-free for serious health reasons, I love any opportunity to support them when I can!}.
Gluten-Free Cookies – Oatmeal, Chocolate Chip, and Peanut Butter

Pre-heat your oven to 325°
In a very large bowl (this recipe makes a lot of cookies) mix the following:
6 eggs
2 cups sugar
2 cups brown sugar
1.5 tsp corn syrup
1 TB + 1.5 tsp Vanilla
2 sticks butter softened
mix well together and then add:
3 cups peanut butter (I use chunky!)
4 tsp baking soda
9 cups gluten free oatmeal
1 pkg 11oz milk chocolate chips
1 pkg (9.9oz) regular M&M’s
Scoop onto an un-greased cookie sheet (I use my Pampered Chef 2oz scoop and then flatten them a little with a fork).
Bake 8-1o minutes (my oven takes 10 minutes every time, I use a Pampered Chef stone).
I cool on the cookie sheet for abut 4 minutes before transferring to a cooling rack.
These Gluten-Free Cookies stay so soft and chewy. It’s awesome that they make a LOT, perfect for sharing (and I shared because otherwise I would have eaten them all).
