You know, some nights are just crazy busy. You are busy doing things all day long and then before you know it, it’s dinner time and you have NOTHING planned. I try really hard to either keep freezer meals on hand for nights like that, or ingredients in my kitchen for a recipe that can be prepped, cooked/baked, and on the table in 30 mins or less. This Easy Pasta Bake is definitely one of those recipes! It takes almost no time to put together, minimal ingredients and my whole family LOVES it! It would also make a wonderful freezer meal.
Easy Pasta Bake
(Recipe and photos by Paula with The Housewives of Riverton)
16 oz package Rotini pasta
1 1/2 lbs of ground beef or ground turkey
36 oz of your favorite spaghetti sauce (we use Hunt’s Traditional)
1 1/2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
1/2 cup shredded Parmesan cheese
Salt, pepper, garlic, and ground oregano to taste
Preheat your oven to 350°F. Boil your pasta according to the package. Don’t over boil, you don’t want mushy pasta! Drain well. While your pasta is boiling, brown your ground beef or turkey and season with salt, pepper, granulated garlic and oregano to taste. In a large bowl, combine your spaghetti sauce, pasta, and ground beef. Add 1 cup of mozzarella, 3/4 cup of cheddar cheese, and 1/2 cup parmesan cheese. Stir until well combined and mixture is totally coated in spaghetti sauce. Pour into a 9 x 13 pan, sprinkle remaining mozzarella and cheddar cheese on top, cover with foil and bake for about 15 minutes, until hot through and cheese on top is melted.
My family loved this recipe and it was a great way to get spaghetti like flavor, but mixing it up a little! The best part is, if any of it survives the first night, it warms up wonderfully as left overs! Try serving it with your favorite veggie and our yummy Garlic Bread!
