When I first moved to Riverton, a group of us girls would get together and have “mocktail parties”. We’d have some girl chat time and drink delicious, non alcoholic drinks. One of my favorites was what I call an Ice Cream Margarita!
You need minimal ingredients for these and they taste awesome. I thought it was fun to rim the glass with sugar to give it a sweet taste when you take a sip!
Ice Cream Margarita
2 cups regular margarita mix
2 cups ice (I prefer deli/pebble ice)
2 cups vanilla ice cream
2 teaspoons sweetened lime juice (found on the drink mix aisle)
3 tablespoons simple syrup (found on the drink mix aisle)
Lime wedges (optional)
Sugar (optional)
Directions:
Add margarita mix, ice, and ice cream into a blender. Blend until smooth. Add lime juice and simple syrup. Blend until combine. Using a lime wedge, coat the rim of your glass with lime juice. Put a small amount of sugar in a small, shallow dish. Coat the rim of your glass in the sugar. Garnish with a lime wedge and serve. 4 servings.
These are so yummy and are perfect for cooling down on a hot day. They aren’t too sweet and aren’t too tart, so you’re whole family will love them! Enjoy!
