Yay for Fall and yay for getting to eat hot soups and stews again! I’m participating in the Ultimate Recipe Challenge and this month’s ingredient is Broccoli. I LOVE broccoli! I was so excited about this challenge because there are about a million broccoli recipes that I want to try. I decided to make a Loaded Broccoli Cheddar Soup.
I’ve always loved broccoli cheddar soup, but I wanted to make something a little more filling. I added potatoes, carrots, onions and bacon. It was so delicious and we loved it! It was really filling and topped with homemade croutons made it just perfect!
Loaded Broccoli Cheddar Soup
2 cups chicken broth
1 1/2 cups vegetable broth
2 large carrots, diced
1/2 yellow onion, diced
4 medium potatoes, cut into small chunks
1 medium broccoli crown, chopped small
3 tablespoons butter
1/2 cup flour
3 cups milk
2 cups medium cheddar, shredded
1 cup sharp cheddar, shredded
2 teaspoons season salt
1 teaspoon pepper
1/2 lb thick sliced bacon, fried and chopped
In a large pot, add your chicken broth, vegetable broth, carrots, and onion. Bring to a boil for five minutes and then let simmer for 5 minutes. Add broccoli and let simmer for another 10 minutes. In a separate pan melt butter over medium heat, whisk in 1/4 cup milk and 1/4 cup flour. Whisk in the rest of the milk and flour. Whisk in season salt and pepper, then sprinkle in cheese one cup at a time, keep whisking. Add cheddar mixture and bacon to the large pot and stir until combined. Top with croutons and enjoy!
