I love making these Mason Jar Omelets because they are so easy! They work great for when you are camping because you aren’t having to try to skillet cook the omelet. But I’ve found that they are perfect for those busy mornings. I just put all of the ingredients in the jars, let them cook and cool while everyone is getting ready and then it’s time to eat!

Mason Jar Omelets
1 small mason jar
2-3 eggs depending on size
1/8 cup cheese
1/8 cup bell peppers, chopped (I used red and green)
1 slice of sweet onion, chopped
1 tablespoon water
salt and peppers to taste
Start with your eggs and your mason jar, crack them add the salt and pepper and then scramble your eggs in the jar. Next add your peppers and onions. Mix again. Now add your cheese and your tablespoon of water and mix again. Close your jar with a canning lid and make sure it’s on tight.
Place it in a pot of boiling water. You are going to want to make sure that the water goes at least 2 inches over the egg mixture, but it doesn’t have to cover the whole jar. Let it boil for about 15-20 mins. Remove it from the water and let it cool for a few minutes. The jar stays warm for quite a while, so make sure you use pot holders.
Now if you are camping or want to keep the amount of dishes you have to do to a minimum, you can eat them right out of the jar. I usually split one between my two little ones so I put it on a plate.
The great thing about these is how simple they are. I make up a few jars first thing, put them in the water and then while everyone is getting ready for work and school they are cooking and cooling, so you have breakfast ready when you are! Another great thing is you can make them to your and your family’s tastes. You can mix up your mix ins to switch things up. Bacon, different cheeses, mushrooms, spinach, tomatoes…whatever your taste buds desire! Enjoy!
