Do you have a recipe that your family just LOVES?
About a year or so ago I came across a recipe for Mayonnaise Chicken. I had everything to make it so I figured I’d give it a shot. It quickly became a family favorite. Every time I cook chicken the kids ask if I’m making “THAT” chicken. I always made it with the full chicken breasts but after making Paula’s amazing Hand Breaded Chicken Strips I thought to myself “why not slice the chicken up for this recipe too?” I am happy to say that it worked wonderfully and cooked in 1/2 the time.
The recipe is as follows and is slightly adapted from Best Foods:
Preheat your oven to 425*
1 cup Best Foods Real Mayonnaise
1/2 cup grated Parmesan cheese**
6 boneless, skinless chicken breasts sliced into about 1″ thick strips
at least 1/2 cup Italian seasoned dry bread crumbs
** – I have also used shredded Parmesan. The family didn’t seem to notice a difference, I liked it better with the shredded Parmesan cheese personally.
Lightly spray a baking sheet or casserole dish and lay your chicken breast slices in a single layer.
Combine mayonnaise and cheese into a bowl and spread well over all the pieces of chicken.
The original recipe called for only 4 teaspoons of the bread crumbs, I don’t think that is nearly enough. I used a little more than 1/2 a cup of the bread crumbs for our 6 chicken breasts.
I cooked my chicken strips for just over 10 minutes and they were fully cooked. Be sure to check that each piece of chicken is fully cooked using a meat thermometer and then serve with your favorite sides. I haven’t tried with light mayonnaise yet but I have heard that is also good. You’ll have to let me know what you think, as I said before my family loves it and when I’ve made it for others I’ve had the same reaction. It’s a keeper here!
