I was SUPER excited when our neighborhood grocery store had it’s fresh salmon on sale. I LOVE salmon! And luckily, my whole family really likes it too. Normally I just bake it in the oven with some seasonings, but I wanted to switch it up this time and make Parmesan Salmon!
You may have tried our Parmesan Mayonnaise Chicken, and this recipe is an adaptation of that. It’s so delicious and the salmon comes out so moist! You are going to love it!
Parmesan Salmon
3.5 lb salmon
3/4 cup mayonnaise
1/3 cup grated parmesan
1 cup plain bread crumbs
1 packet dry italian dressing
1 teaspoon pepper
fresh lemon wedges (optional)
Directions:
Preheat your oven to 350°F. Cover a baking sheet with tinfoil. Place your salmon on the baking sheet, skin side down. Sprinkle with pepper. In a small bowl mix your mayonnaise and parmesan together. Spread the mayonnaise mixture evenly on your salmon. In another small bowl, mix together your bread crumbs and italian dressing packet. Sprinkle that evenly over your salmon. I like a good amount of bread crumb mixture on mine, but feel free to lighten up the amount you put on your if you’d like. Place your salmon in the oven for 20-25 minutes, or until done. You don’t want to overcook it, because it gets mushy. The internal temperature should be about 145°F when using a meat thermometer at the thickest part of the salmon. Cut into the desired portion size and serve with your favorite sides!
This recipe can be adjusted if you are using a smaller or larger portion of salmon. Enjoy!
