Oh how I love these Peanut butter bars. I remember eating these as a kid at school lunch and how excited we would get when we found out it was peanut butter bar day! I remember kids would start asking you in class before lunch if they could have your peanut butter bar and I would always tell them NO!! I’ve been making these for my family for years and my kids love them so much, especially my one daughter she wanted these instead of a birthday cake one year! There is one bad thing about these peanut butter bars well actually 2 they are highly addictive and they make a lot so you think you need to keep eating them because they are there and you don’t want them to go to waste! This is where you run into a problem, you know the cutting off little pieces as you walk by and then later noticing a whole row is gone and realizing all of your kids are at school and your husband is at work and you are the only one at home. You couldn’t have possibly eaten that much yourself??This may or may not have happened to me before.
I’ve used this recipe for years I’ve seen different variations out there and have actually tried a couple of different recipes but they just aren’t the same. I always come back to this one. I love this recipe and I hope you do too!
Ingredients you will need:
1 c. sugar
1 c. brown sugar
1 c. butter (softened)
1 tsp. vanilla
2 large eggs
1 cup peanut butter
2 cups of flour
1 tsp. baking soda
1/2 tsp. salt
2 cups of whole oats (I’ve used the quick oats but I like the whole ones better)
Directions:
- Cream together the butter (softened) and the sugars, Then you will add the vanilla,eggs and peanut butter. After this is all mixed up slowly add in your flour, baking soda and salt and then add your oats.
- After your oats are all mixed in spread your dough onto a greased cookie sheet. Bake at 350 for 20-22 minutes. Do not over bake.
- After you take them out of the oven let them cool for a few minutes then you will spread a thin layer of peanut butter over the bars. Here is a picture with the layer of peanut butter on them. After you have spread the layer of peanut butter place them into the fridge for 10-15 min. to harden the peanut butter. I’ve actually made them where I didn’t do the layer of peanut butter but I didn’t like them as well. I liked them much better with the layer of peanut butter. It’s worth the extra calories I promise!
Now for the good part the chocolate frosting!
Frosting recipe
1 stick of butter (softened)
5-6 Tbsp. of milk
2 tsp.vanilla
1/2 Hershey’s cocoa
2 cups powdered sugar (may need a little more)
I have found that this frosting recipe makes the perfect amount of frosting for these bars you shouldn’t need to double it.
Here they are all cut and ready to eat with a large cold glass of milk! I promise you won’t be able to eat just one!

I love peanut butter bars! Just looking at that yummy treat brings me back to my childhood! ๐ I would love to make them, but I’m scared I would eat WAY to many haha ๐
Yes I always eat way too many and feel guilty after but they are worth all the calories! ๐
