So while I was planning my menu, I saw that our local grocery store had it’s pork sirloin roast on sale. The only problem was I didn’t know what to do with a pork sirloin roast. So I put it into Google and found this great recipe from Taste of Home. I adapted it a little to work with my family’s tastes, and it turned out great!
Pork Chili Verde
Adapted from Taste of Home
1 – 3lb boneless pork sirloin roast
1 1/2 cup sliced carrots
1/2 medium onion, sliced thin
1 cup finely chopped cilantro
2 teaspoons garlic
1 – 28 oz can of green enchilada sauce
2 tablespoons olive oil
First you need to cut up your roast into 1 inch cubes. Next prepare your carrots, onion and cilantro. In a large skillet, pour in your olive oil and then saute the roast cubes, carrots, onion and cilantro. Sprinkle with garlic. Cook for about 3 minutes and transfer to your crock pot. Once in the crock pot, pour the enchilada sauce over the top. Stir to combine and let cook for 5-6 hours on low/medium.
I served this with Rice a Roni Spanish Rice and tortillas. Of course we had all the toppings, lettuce, cheese, sour cream and avocado. 🙂 Our family LOVED this. The boys gobbled it up and Josh and I really enjoyed how well the flavors blended together and how the pork was SOOO tender. Enjoy!
