I was so happy with how this bread turned out! I had been looking for a Pumpkin Bread recipe that wasn’t a sweet bread. This turned out just perfect!
Pumpkin bread
(Recipe adapted from Bake With Paws by Paula with The REAL Housewives of Riverton)
3 1/4 cups bread flour
(if kneading by hand, have an extra 1/4 cup of flour on hand in case your dough is sticky)

1 cup pumpkin puree
4 tablespoons sugar
2/3 cup milk
4 tablespoons butter, melted
1 large egg
1 tsp salt
1 tsp instant yeast
1/2 tsp pumpkin spice
1/4 tsp cinnamon
1/4 tsp nutmegFor this recipe I had my bread maker do all the hard work. I added all the ingredients and put it on the “dough” setting. (If you are kneading by hand or using your Kitchen Aide add all ingredients and then knead for 15 minutes. Let rise for 45-60 minutes, or until doubled in size. Punch down and follow the rest of the instructions.)
Once your machine is done, pre-heat your oven to 350°F. This two medium loaves. Spray your loaf pans with non stick spray and split your dough in half, place one half in each pan. Cover with a hand towel and let rise (45-60 minutes, or until dough has doubled in size). Bake for 25-35 minutes. Let cool in pan for about 5 mins and then remove from pan and finish cooling on a rack.
As I said, this isn’t a sweet bread and was delicious slightly warm with butter. I also used it the next morning to make Pumpkin French Toast!

It was a big hit with the family! Perfect for a Fall morning breakfast! This dough would also make great Pumpkin Rolls to go with a chicken or turkey dinner.
