I love pretty much all things pumpkin. I figure this is because I was born in November. There were many years that I chose to have pumpkin pie for my *birthday cake* instead of an actual cake.
As you can imagine with such a love for pumpkin I have tried a whole lot of recipes (I give Costco pumpkin pies 2 thumbs up and would gladly eat an entire cheesecake factory pumpkin cheesecake on my own). Pumpkin Chocolate Chip cookies are a big favorite in our house so I have tried a lot of recipes. There are some out there that are a lot easier to make than these are (not that these are hard at all) but hands down these are my favorite. They stay nice and soft and the flavor is amazing!
Here is your supply list
(I triple the recipe because a. we like them that much and b. it uses the whole can of pumpkin – I’ll include the single recipe at the end)
Pre-heat oven to 350
7.5 cups flour
3 tsp baking soda
3 tsp baking powder
3 tsp cinnamon
1.5 tsp nutmeg
1.5 tsp salt
1.5 cup butter
4.5 cup sugar
1 large can of pumpkin
3 eggs
3 tsp vanilla
1.5-2 bags chocolate chips
Combine in separate bowl flour, baking soda, baking powder, cinnamon, nutmeg and salt.
Cream butter and sugar.
Add pumpkin, vanilla and eggs. Beat until creamy and then add dry ingredients.
Make sure you scrape your sides.
Add chocolate chips
Spoon onto cookie sheet.
Bake 11-13 minutes (typically with my oven the 1st batch takes about 14 and the rest right around 11-12 – I think they are the best when you touch the top lightly with your finger and it is no longer tacky).
The single recipe says it makes 3 dozen. I think the last time I tripled the recipe (and counted) I got about 133 cookies, so pretty close.

2 1/2 cups flour
1tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1/2 cup butter/margarine
1 1/2 cup sugar
1 cup pumpkin
1 egg
1 tsp vanilla
chocolate chips
