My sister, Jenn and I have been switching days making after school snacks for the kids. It’s worked out really well! Some days are a little slimmer than others. (Their snack from me on Wednesday was graham cracker and frosting sandwiches). Today I half way forgot it was my day and scrounged my pantry for something yummy to make for them. This is what I came up with! (I left the decision up to Jenn if she wanted to use this as the after school snack or save it for dessert. :-))
Now as much as I would LOVE to say “I whipped this baby up from scratch in just under 3.5 hours”, I can’t. This recipe was SUPER easy and VERY delicious! Now being incredibly lame as I am. I totally forgot to take pictures of the actual making of the cake. Ooops! Never fear, you truly aren’t missing anything!
First things first…gather up your ingredients!
1 – box of your favorite brand of yellow cake mix
1 – 15oz can of prepared pumpkin pie filling
3 – eggs
2 – teaspoons of cinnamon
1 pinch of nutmeg
Feel free to add some yummy extras like nuts, raisin or heck even chocolate chips!
Now preheat your oven to 350°F. Mix all of the ingredients together in a medium bowl (except the yummy extras). Make sure it’s mixed well with no clumps. If you are adding yummy extras, stir them in last. Next grease and flour your bundt pan. You can use any cake pan you’d like…I think the bundt pan gives it a pretty look. ๐ Fill your pan with the batter and stick that bad boy in the oven. I baked two in my oven at once and they were done at exactly 40 mins. If a toothpick comes out clean…you’re all good!
Here’s how pretty it came straight out of the oven. Let it cool in the pan for about 5 mins.
The crisco and flour help the cake slide out easily! Let it cool for 10-15 minutes on a rack.
Now there are two ways you can do your cream cheese frosting glaze. The super easy way is to buy a can of cream cheese frosting, scoop a bit out in a microwave safe bowl and nuke it for about 15 seconds or until it’s liquidy. <—Fear my made up words! Then use a fork to drizzle it on the cake.
I like to make my own cause then it can be a bit more cream cheesey. <—-There’s another one! ๐ I do this all to taste, so bear with me.
I use about 4 oz of cream cheese
About 1.5 cups of powdered sugar
1 teaspoon of vanilla
2 tablespoons of milk
You are going to mix this all together until it’s creamy. It’s going to be like regular frosting so you will need to nuke it until it’s liquidy. Use a fork to drizzle it on the cake.
And there you have the finished product!
My house smells like Fall right now! While I’m not ready to let go of warmer, Summer days, I’m very excited for crisp, Fall nights and yummy holiday treats! I know your mouth is watering, so go make this NOW! Enjoy!

I think it probably wouldn’t have as much of the “spice” taste in it with just regular pumpkin. If you wanted to prepare the canned pumpkin with either pumpkin spice or the spices that you would add for pumpkin pie it would be about the same. I’m also of the mind to just give it a try and see how it turns out! ๐ Good luck!

Great idea to switch off after school snack days. I’m going to have to move next door to you all and join in. OR, you could all move to Texas. There are still lots available in my hood. I’ll fight off the scorpions for you. You can swim in my non-existent pool on hot days. Is it a plan???
