I’m blessed to have non picky eaters (knock on wood) who most of the time prefer fruits and veggies over any other “snack” items. My kids honestly think cut up fruit is dessert! But one of their favorite things is marshmallows. Yep, my kids can devour a bag of marshmallows in less than 5 mins! While I was trying to think of ways to mix up how we do s’mores, I thought…why not add some fruit? Maybe it’s just to make me feel a little better about there being SOMETHING healthy in their sweet treats. So I came up with this easy recipe for yummy S’mores Banana Bites.
S’mores Banana Bites
1 large banana, sliced into six chunks
6 regular size marshmallows, cut in half
1/2 cup crushed graham crackers
melting chocolate or milk chocolate chips
skewers or lollipop sticks
small baking sheet
Skewer one half of the marshmallow, the banana chunk and then the other half of marshmallow onto each stick. Place on a tray or cookie sheet covered with wax paper or parchment paper. Set to the side while you melt your chocolate in a shallow bowl. Melt your chocolate in a microwave-safe bowl or you can also do this over a double boiler on low to medium heat. In another bowl, place your graham cracker crumbs. Once your chocolate is melted, use a spoon, fork, or ziploc plastic bag with a hole in it to drizzle the melted chocolate over the skewered banana slices and marshmallow. Then give them a sprinkle of graham cracker crumbs. Cover and place in fridge until ready to serve.

My kids thought these were so good, and because it’s a simple recipe they can even help skewer them! It was a perfect little sweet treat. I think these would be so fun for a birthday party snack or as something to take to a potluck barbecue this summer! It’s not a super healthy dessert, but there are ways to make these into more healthy banana s’mores bites. You can use dark chocolate or semisweet chocolate chips instead of milk chocolate. It will cut out some of the sugar and calories, but will still cure your sweet tooth. Another fun twist would be to add peanut butter drizzle along with the chocolate. Make sure you add this to your delicious dessert recipes, healthy recipes, or brunch recipes.

[…] Don’t spend your precious summer time slaving over dessert. Our Summer Berry Ice Box Cake is super easy, but your family will think you spent hours on it! Maybe it’s just me, but I feel like the summer is already gone. I don’t want it to be over, we’ve been so booked all summer that I feel like we haven’t had the time to just enjoy the hot, sunny weather. We had baseball into June, then high school football, swim lessons, trips to Idaho and Oregon, Trek, football camp, and now we are starting in on little league football. I have to say I miss the days when my kids were smaller and we had no place to go and nothing to do. We could spend lazy days at the park or splash pad and just relax. Even though we have been super busy, we are taking some time to just enjoy the day together by going to my brother’s place where we can play in the pool and eat pizza. No one has anywhere to be, and it’s going to be awesome. Since we are ordering pizza, I decided to make something cool and delicious for dessert and thought an ice box cake would do just the trick. It’s easy to put together, looks pretty, and tastes amazing! The ingredients are really simple, graham crackers, whipped cream, cream cheese, and some fresh berries. You can put it together in about 20 mins, pop it in the fridge for 4-5 hours (or if you’re ahead of the game you can make it the night before and just have it chill overnight), and you’re ready to go! The best part is no baking! You aren’t going to make your air conditioner work overtime just to have a tasty treat! I hope that you have had all the lazy, summer days to enjoy your family.
