S'mores Brownies - Summer S'mores Series

S’mores Brownies Recipe

Paula has been killing it with her Summer S’mores Series. I thought it would be fun to jump in with a recipe. Oh my goodness this recipe was insanely successful and delicious. Not to mention pretty dang easy.

I enjoy brownies just like probably everyone else on the planet but I’m having so much fun making up ways to dress up a box of brownie mix that I think I’m screwing up my diet quite a bit.

S’mores Brownies Recipe
2.5 cups graham cracker crumbs
1/3 cup granulated sugar
12 tablespoons melted butter
box of brownie mix
(or your favorite brownie recipe)
bag of marshmallows
milk chocolate bars

Preheat oven to 350°. Line a 9×13 casserole dish with parchment paper making sure to cover all the way up the sides. Spray lightly with non stick spray and set aside.

In microwave safe bowl melt butter. Combine butter, graham cracker crumbs, and sugar until well mixed. Spread into pan pressing into an even layer. Bake for about 15 minutes until golden brown. Remove from oven and put aside.

While the crust is baking prepare your brownie mix/recipe. Bake as per brownie recipe until a toothpick comes out mostly clean.

Remove from oven and switch oven to broil. Spread an even layer of marshmallows over the warm brownies and place in oven watching closely (I typically leave the oven open a crack so I can watch it continually). Remove from oven as soon as marshmallows are toasted.

While the brownies are baking and marshmallows are browning break your chocolate into pieces. As soon as the marshmallows are toasted place pieces of chocolate all over the hot marshmallows and they’ll melt nicely – do not put the chocolate pieces in the oven, they won’t melt and will just be crumbly and pretty gross.
