I don’t know about you but I feel like every meal needs a salad to make it complete. Often we just have a green salad, a bit of lettuce, some veggies, and my favorite ranch dressing. But sometimes I like to change things up a bit. This Spinach Salad with Poppy Seed dressing is incredibly simple and delicious. My whole family loves it. One of the things I love about it (as silly as it may sound) is how pretty it looks on the table. I made it for our Fakesgiving dinner and not only was it fantastic but it looked so pretty on the table. A perfect fall salad (and spring, and summer, and winter). The recipe isn’t as much a recipe as it is a list of ingredients. They all just depend on how much you want of them in your salad.
Spinach Salad with Poppy Seed Dressing

Spinach leaves
Poppy Seed Dressing
Sliced Almonds
Crasins
Shredded Mozzarella Cheese
Mandarin Oranges
Croutons
Because the dressing can make the salad (especially the spinach and croutons) soggy don’t add the dressing until right before serving (and don’t make an extreme amount because once you add the dressing it doesn’t store well). I prefer to add the dressing to the entire salad and mix it well rather than adding it to individual servings. The dressing is thicker than most so it doesn’t spread well (I think) in individual servings (tends to try to stick to one spinach leaf).
I love how it looks in my bamboo bowl.
And I loved how it looked in my silver bowl on our Thanksgiving table. It’s just a beautiful salad.
