I have been eating frog eye salad ever since I was a little girl. My mom would always make it for family gatherings and now I’m doing the same. This fruit salad is the perfect summer salad and is also great for large crowds because it makes a lot. I have had people ask what kind of noodle is in this salad and it’s called Acini Di Pepi. It can be found on the pasta isle at your grocery store. I always like to buy a couple of boxes at a time because there have been times when the grocery store has been out of it around certain holidays. My kids love this salad and my little boy gets so excited whenever I make it. I really think he’s more excited about the marshmallows and the game of sneaking them when I’m not looking. This is definitely one of our families favorites and I hope you give it a try!
2 cans mandarin oranges
3 T. flour
1 c. sugar
2 eggs ( beaten)
1 cup of miniature marshmallows ( I like to use the colored ones)
1 carton of whipped topping or 1 pt. whipped cream
Cook Acini Di Pepe in 1/2 qt. boiling water until tender. Drain, and put in a large bowl. Drain the pineapple and oranges and keep the juice. (add enough water to make 2 cups juice). To this add the sugar, eggs, flour and salt. Cook until thick stirring constantly. In a large bowl pour the sauce over the Acini Di Pepe and let stand over night. The next morning add the fruit, marshmallows and whipped topping. Enjoy!
