We are already almost a month into summer and I feel like it’s going way to fast! Outside of a tragic water leak/flood issue in our front yard, we’ve been trying to spend our days playing, reading, learning (yes, learning) and of course eating all our favorite summer foods. One that we love is our Summer Fruit Salad. It’s creamy and sweet with just a touch of tanginess.
Summer Fruit Salad
1 – 3.4 oz package of vanilla pudding
1 – 8 oz package cream cheese, softened
1 teaspoon vanilla
1/2 cup heavy cream
1/2 cup milk
juice of 1 lemon
1 lbs strawberries, sliced
4 Cutie oranges, peeled and sectioned
1 – 20 oz can of pineapple chunks, drained well
2 large apples, sliced and cut into bite size chunks
4 kiwi fruit, peeled, cut in half and sliced
2 bananas, sliced
zest of 1/2 lemon
In stand mixer, cream the vanilla and cream cheese until smooth. Sprinkle dry pudding mix over the cream cheese and mix until combined. Next, slowly add the milk, a few tablespoons at a time to the cream cheese mixture. After that, add the milk slowly to the mixture. Lastly, add the lemon juice. Mix on medium/low until smooth. Add all fruit in large bowl, sprinkle with lemon zest. Pour cream cheese mixture over fruit and gently stir until all fruit is covered. Refrigerate until ready to serve.
Make your work go by quickly by getting the kids in the kitchen and have them slice fruit. Bananas can be sliced with a butter knife, so even the youngest ones can help out! The cream cheese mixture gives the fruit even more flavor and basically makes your fruit salad taste like a dessert! You won’t be disappointed!
