I grew up eating lots of burritos. LOTS. ๐ For some reason, my two younger boys prefer quesadillas over burritos. We eat breakfast burritos a lot because they are delicious, but Hudson especially is not a big burrito eater. However, you put everything you’d put in breakfast burrito in a quesadilla and he’ll gobble it down! So here’s our yummy recipe for a breakfast quesadilla!
Breakfast Quesadilla

1 tortilla
2 slices deli ham
1 egg, scrambled
1/3 cup shredded cheddar cheese
Directions
Scramble your egg. When that is done, use the same pan to warm your ham slices. I literally warmed each side for about 5 seconds. Place your tortilla on a griddle on medium. Warm one side, flip it and place half your shredded cheese on half of the tortilla. Spoon your scrambled egg on top of the cheese. Fold your ham slices in half and place it on top of the egg. Sprinkle the remaining cheese on top of the ham and fold the tortilla over the top of it. Carefully flip the quesadilla and let the cheese melt all the way. Slice and serve with your favorite salsa or give our Cilantro Lime Dip a try! Enjoy!
