Chicken Fettuccine Alfredo Recipe (Crockpot and Stove Top)

Chicken Fettuccine Alfredo

Do you have a family favorite recipe?  We have a few and this Chicken Fettuccine Alfredo recipe is right at the top of the list.  I’ve been making it for years and the whole family is all still really excited every time they walk in the house and can smell it cooking.

This post is actually making me giggle a bit.  I shared this recipe here at Housewives of Riverton two and a half years ago and the pictures are a joke!  What was I thinking?  It doesn’t even look like I tried.  I’m not claiming to be a food photographer these days but I can definitely improve on those old photos.  I love Fettuccine Alfredo, I order it many places when we eat out.  I especially love Chicken Fettuccine Alfredo.  Even more than that though I love this recipe.  It is incredibly simple, it can be made in the crockpot or on the stove top.  My favorite is always to get it done first thing in the morning so I don’t have to think about it for the rest of the day.

Chicken Fettuccine Alfredo Recipe

Ingredients:

4 boneless skinless chicken breasts
2 packages of dry Italian dressing mix
2 cans cream of chicken soup
1 package cream cheese (the box size with the tinfoil type wrapping inside)
about 1/4 cup butter
Fettuccine noodles (for this amount I usually do 2 of the 16oz packages)

These photos and directions are from my original post that you can find here.  The photos show a double batch which is why it looks like so much food (oh these pictures!… I don’t even own that pan, crockpot, or counters any more!)

Step 1:
Cut your chicken breasts into bite sized pieces, throw in pan with the butter.

Step 2:
Sprinkle your packages of Italian dressing over the top, mix in well.

Step 3:
Cook over medium/medium high heat until chicken is fully cooked, stirring often.

Step 4:
Put the chicken mixture, cream cheese & cream of chicken soup all into the crockpot.

Since at this point all you’re doing in the crockpot is letting it warm up and the flavors mix I usually just put the lid on and in like 1/2 hour come back and mix it up a bit and continue to do this until the cream cheese is all mixed in well and everything is well combined.  You can add milk if you want your sauce a little more soupy.  It will thicken up quite a bit as it cools so don’t let how thin it is in the pot fool you.
Chicken Fettuccine Alfredo
As I mentioned above it is VERY easy to make this on the stove top completely as well.  Instead of putting the chicken and everything in the crockpot just do it all in your pot on the stove.  I love doing it in the crockpot because it gets it out of the way earlier in the day and we can eat at 5 (or so) instead of starting dinner at 5 (or so).  Typically we serve it with our favorite Garlic Bread Recipe and salad.  I’m so thankful my children eat vegetables so well.  They love salad but we’ve also had broccoli, asparagus, and green beans with this too .
