My husband has been begging me forever to make fried rice. He loves it and I had NO clue how to make it. Luckily for me, Amber over at Dessert Now, Dinner Later posted an awesome recipe for Ham Fried Rice. Her recipe is so easy to follow, so that made it much less daunting for me. I adapted it slightly for my family and what I had on hand. 🙂
Chicken Fried Rice
Adapted from Amber at Dessert Now, Dinner Later
2 eggs, whisked
1/4 onion, chopped
2 cloves garlic, minced
8 oz chicken (I used one large boneless, skinless chicken thigh) chopped small
3 cups cooked brown rice
1/4 cup soy sauce
1 tablespoon brown sugar
1 cup frozen peas (thawed in warm water)
1 1/2 tablespoons oil
In a large skillet with 1/2 tablespoon oil, scramble your eggs until done. Remove from skillet and set aside. Add 1 tablespoon of oil to the same skillet and add onion and garlic. Saute for about 5 minutes and then add chicken. Continue cooking until chicken is done. Add brown rice and fry until rice gets just a touch browner. Combine your soy sauce and brown sugar, add and stir. Finally add your peas and scrambled eggs. Continue stirring until heated through.
I served ours with Teriyaki chicken (no secret recipe, just marinate your chicken in Kikkoman’s Teriyaki Sauce for a couple hours and cook in a skillet until done) and there was nothing left in the end! Enjoy!
