If I’ve said it once, I’ve said it a million times…I love sandwiches!! They truly are my favorite food! I made a chicken dish for my family and had some unused, cooked chicken leftover. I didn’t want it to go to waste, so I decided it would be perfect for Chicken Salad Sandwiches. These were super easy to put together and SOOOO yummy!
Chicken Salad Sandwiches

One large chicken breast, cooked, shredded and chopped
1 stalk celery, chopped small
1 green onion, chopped small
1/3 cup mayonnaise (use more if you prefer a more moist salad)
Salt and Pepper to taste
Directions:
Cook, shred and chop your chicken. Add chopped celery and green onion. Mix in mayonnaise, salt and pepper. Serve on a crusty roll or on regular bread with tomatoes and lettuce.
I have to say that unless it’s proven your kids like chicken salad, this might not be for them. My 12 year old really enjoyed it, as did my husband and I. My 4 and 6 year olds preferred PB&J. In the words of my 6 year old he “doesn’t like crunchy sandwiches.” LOL! What can you do?!
