This salad is something I used to make for a health club cafe I worked at when I was in college. It was a sell out every day! So I know you will all love it as much as I do. It is great for a meal or a side. It is also great packed for lunch. The dressing makes this salad even better as a left over meal.
So here it is!
Chinese Chicken Salad
Dressing:
1/2 tea dry mustard
1/2 tea garlic powder
1/2 C soy sauce
3/4 C rice vinegar
2 TBLS chopped cilantro
1/4 C seasame oil
Mix all ingredients together in a separate bowl.
Salad Mix:
3 green onions thinly chopped
1-2 peppers any color
2 large grilled chicken breasts, cut against the grain into bite size pieces
1/2 C Roasted peanuts (to taste)
Sugar Snap Peas
1 16 oz. package of Spaghetti, cooked and rinsed
In a large bowl mix all salad ingredients together to combine. Pour dressing over top and mix to cover. Refrigerate at least an hour for flavors to combine.
