Are you looking for a great after school treat? Well, this is one that will have you all snacking in complete satisfaction!
I was given a plate of this amazing concoction 2 years ago for Christmas. I instantly fell in love and got the recipe. I did change it slightly by toasting my almonds, but all in all this is exactly what the Newmans made and brought my family.
It is very simple to make and really takes minutes to prepare. So, gather the ingredients and whip this up today!
1 (14 oz-17 oz) box of Rice Chex cereal
7 ounce bag of sweetened coconut
5 ounce bag of slivered almonds (toasted) *
1 1/2 cups sugar
1 1/2 sticks (3/4 cup) margarine or butter
1 1/4 cups light corn syrup (Karo)

Instructions:
First take a large bowl and lightly spray it with Pam. Then add all the Chex cereal, the Coconut, and the toasted Almonds. Mix them together gently.
Next, in a medium sauce pan combine the Sugar, Butter, and Karo Syrup over high heat. Bring ingredients to a boil and then turn the burner to medium. Cook mixture for 3 minutes.
Next, pour the sugar mixture over the Chex mix and gently fold ingredients together until everything is covered.
Spread the Chex mix onto parchment paper or wax paper to cool, then put into plastic bag(s) for storage.
*Slivered almonds do not come toasted. To toast them place them on a cookie sheet in a single layer. Then turn your broiler on high and place the pan in the over. Keep your oven door open and watch them carefully.Remove them as soon as they brown. They burn easily, so don’t walk away!)
The girls loved this after school snack! The only dissenter came from Jenn’s youngest daughter, who announced that she does not like coconut! Enjoy!!
